The trip to Bintan Island Indonesia was one of our highlights. If location, as they say, is everything, then sitting at the economic hub of Asia is a precious pearl. The largest and most significant island in the Riau Archipelago of Indonesia, Bintan is a mere 45 kilometers from Singapore. Eighty international carriers fly into Singapore’s Changi Airport with access to 50 countries and over 180 cities in the world. A growing population of 2 billion people is lives within 7-hours of flying time to Singapore, and Bintan is just 55-minutes away by ferry from Singapore. Along its 103-km northern coastline of Bintan Island lies Bintan Resorts. Here, you will find endless beaches, secluded coves, lush greenery, azure waters and year-round sunshine. Unprecedented in its size and scale of development, Bintan Resorts is by far the single largest master planned resort development in Asia.

Today we met the Australian delegation from Box hill institute. All of us participants had a briefing regarding the upcoming convention. We all received detailed event schedules and very cool shirts which we have to wear during the three day convention. The ITE convention is held biennially. The first ITE student seminar was held in 1997. In 2007, ITE collaborated with Hong Kong vocational training council and held a joint ITE-VTC student seminar in Hong Kong. There are four partnering institutions for the 2009 seminar. They come from Australia, Canada, Germany and Hong Kong.

Today all 10 of us from SAIT, the German delegation, 2 instructors and 4 students from the GDS College and one instructor from the US toured Sentosa Island. It gave us a change to interact with each other and exchange information about our colleges.

Since we have some busy days coming up on Saturday and Sunday, we took couple beach days today and tomorrow. Six of us booked a cheap first class resort in Indonesia, only a 45 minute ferry ride from Singapore. We continue with our Industry visits on Saturday. Sunday we go on an outing with delegates participating in the international student conference.

This was one of our busiest days yet. We met at 9 am and took the regular transit all across the island to the Unicord tofu factory. At first tofu tasting was not my number favorite activity. To my surprise I was impressed by tasting spicy tofu, bbq tofu and teriyaki tofu. We had a great tour of the factory.
Next stop was the Hyatt Regency hotel. We had a chance to meet the hotels executive pastry chef and the famous district pastry chef Gottfried Schuetzenberger, responsible for the Asian Hyatt hotels. We took the time to sit down in the restaurant and tasted some of the a la carte desserts. Wow, creamy, very flavorful and magnificent presentations. Next stop was the Goodwood Park Hotel, a private owned, first class hotel. Just across the street is the Royal Plaza hotel which we visit next. I was amazed by their pastry display, very contemporary display cases, superb packaging and very creative cakes and pastries. By now we on our feet for 8 hours and needed a break. We hooked up with some of the ITE west instructors for dinner. Before we had dinner we had a chance to do some prawn fishing. It is a little artificial pond filled with life prawns. For $15.00 in an hour you can rent a fishing rod and try to get as many life prawns as you can. Afterwards we cooked the prawns on provided BBQ’s, a very interesting experience.

All of us went touring through the city again. Both of our groups did some sight seeing in Singapore. Laurie’s group toured little India and the Buddha tooth relic temple.
The baking and pastry students visit a few more small owner operated pastry shops. We also visit a few kitchen and bakery supply stores. Most equipment sold in these stores come from Germany, high end knife, pastry, pot and pan products. We continued on to have lunch, Sie Sie, baking and pastry instructor from ITE took us out for dim sum.

Today we met up with some ITE instructors. Laurie and her group are visiting the CPTC. CPTC is the training centre that contains an industry scale petrochemical process plant. Designed to operate as an actual production unit in a typical commercial plant, the process unit will allow trainees to experience real plant operations to enhance their training experience under safe and controlled conditions. The other visit was to the Chem gallery. The Chem gallery showcases the history and development of process chemical industry in Singapore.
Andreas and his group was taking a culture trip to little India, a cultural tour to Abdul Gaffour Mosque and an industrial visit to the intercontinental hotel.
One of our highlights was visiting the Canele Patisserie and Chocolaterie. The information I was given is that this pastry shop is one of the most exclusive one in Singapore. Since we actually bought some pastries, $7 a piece they did not mind to take pictures inside the café. I guess from now on I make sure we buy some things before asking to take pictures. Fair enough, everybody likes to make some money. I also find it very difficult to find chef’s to take some time out to talk to us. Overall, we had a great experience today and sampled a lot of great food.

Tan Sie Sie, Instructor at the ITE college brought us to the Chinese garden where we seen a 300 year old bonsai tree. It was a very traditional Chinese park, one of the most quite and relaxing places in a fast paced city. We continued on to Holland village, this part of the city has a real European flair. Holland village offers besides shopping a variety of specialty bakeries, pastry shops, restaurants and delicatessen shops. I found it very difficult to take pictures inside any of these places.
One of the most famous bakeries we visit was the Provence bakery and café. Provence is a unique Japanese style bakery and cafe in Singapore. Every piece of bread in Provence is hand-made from scratch whole-heartedly by Japanese bakers.
Late afternoon we finally hit the beach. We arrived at East point park where Kristin, Steven and Ryan decided to go wind surfing. I must say it was a very entertaining and fun afternoon.

Our day started at 9am when our host Alex met us at the school. After a short breakfast we took a tour of the college east campus. One of the places we visit was the beauty lab, the food processing lab and the plant process lab. Around noon we boarded a buss and drove across the city for lunch. We met Dr. Derek Yeo, deputy director of ITE College west. After lunch we continued to ITE College west. After a presentation by Tan Teck Hwa, manager/student development and manager of continuing education and training we toured the hospitality and tourism classrooms.
We would like to say thanks to Dr. Derek Yeo, Tan Teck Hwa, Ms Aw Bee Eng, Mr Justin Chua, and Ms Tan Sie Sie, for giving us the tour and the opportunity to learn more about their Institution. Also special thanks to Alex Yeo Choon Hock who spend all day with us.

Today we split into two groups, Instructor Laurie and her group spend the day on campus east in the chemical process technology department. The students got hands on sessions with Lee Yew Mun. Afternoon activities included occupational health and safety theory lessons, followed by practical hands on sessions in environmental technology which was presented by Han Sern Chiew.
Myself and the three Baking and Pastry Arts students took the transit to the West campus about 45 minutes LRT ride across the city. We had an ice breaking session with Tan Sie Sie Baking and Pastry Art instructor followed by a pastry demonstration by Tanty Suryani. After lunch we got introduced to Asian desserts and sweets which were mostly jelly and sweet syrup style desserts. Tomorrow the students will have hands on training sessions. Around 5 pm we boarded the train back to the East College.

Again this morning the Baking and Pastry Arts students travelled 45 minutes on the LRT system to the West College. After reaching the college at 9am all four of us attend the hands on session in the baking labs. I had a change to sit down with Justin Chua Lam Soon the section head of the Baking and Pastry program to discuss course outlines, learning objectives and daily shop activities.
The second group had it much easier when it came to travelling; the environmental lab and chemical technology labs are all on the east campus where we are staying at. This group met at the life science department and had hands on sessions with Ms Joyce Ng. The afternoon hand on session was based on food quality control with Ms Jenny sng.

After another LRT ride to the west side, the baking and Pastry Arts students arrived at the college just in time to be part for the morning demonstration. Today Tan Sie Sie the Baking and Pastry lecturer facilitated the shop class. At this time the students are learning how to compose a plated dessert, presented by second year baking and pastry students at ITE. So far all the demonstration are very meticulous which gives the students the opportunity to ask questions throughout the instructor’s presentation. The course is set up that the instructor gives a demonstration on two products throughout the first day which the students duplicate the second day. The SAIT baking and pastry arts students and I gave a presentation to the ITE students on SAIT, Calgary and our baking and pastry arts program.
The second group’s hands on session are in chemical process technology department. The morning session includes equipment maintenance and the afternoon session included process equipment and process operation.

A little change in program, SAIT students decided to give a demonstration to ITE baking students on how to make a pecan pie. Ryan, Kristie and Vanessa are very excited to give a demonstration. There is a lot of interaction between the SAIT and ITE students. Over the past week ITE student went out of their way to accommodate the SAIT students. It is a very positive experience for everyone.
The afternoon session consist of an Asian dessert presentation by Tan Sie Sie. Singapore offers so many different Asian food varieties from so many different cultures which carry over to the dessert section. At this point we did not have any bad food experience; even the cheapest Asian convenient foods available on every street corner are tasty, flavorful and save to eat.
Laurel and her students are active in the life science department. On today’s agenda, sharing of the applied food and science, biotechnology and chemical technology courses, presented by section head Ms Trionna Yio. The afternoon session includes basic instrumental analysis followed by good manufacturing practice.

Travelling from Calgary to Singapore, approximately 14000 km and 33 hours. Upon arrival at the airport in Singapore at 2 am in the morning, we where welcomed by Alex, Chris and other ITE employees.
Day 2 Saturday
June 6, 2009
Since we travelled for 33 hours we lost a whole day. Alex met us at 11 am and gave us the three week itinerary.
After breakfast Alex showed us the college vicinity at east point mall. Next was the tour around city hall followed by touring some interesting points along the river.
Day 3 Sunday

Today our journey took us to a very fancy shopping district it called Orchid street. Mostly high end designer label clothing, it is amazing how expensive some of the stores are. Most of the stores do not even display any price tags. Steven, Ryan and myself ventured into the Hard Rock Café to buy some shirts. Since it was such a hot day and all we usually drink is water, we treaded ourselves to a small beer. After paying $14.00 Singapore money (about $12.00 CDN) we came to the conclusion to stick to water…LOL
After meeting our group again, we decided to have sushi. It didn’t take us too long to find a cool little place by the river. After consuming six small pieces of sushi worth about $30.00 and one order of maki rolls for $12.00 I came to realize that even in Singapore eating sushi is a treat.
After our dining experience we ventured into China town and found some really good bargains for shopping.
The last stop for me was the grocery store, buying bottles of water, fresh fruit and other little food items. When entering the mall, there where a lot of activities, camera’s, video production companies and a lot of spectators. I guess I walked into the final stages of the Miss Singapore pageant.
Again, we had an awesome day and it was great to witness a special Singapore culture event.

Travelling from Calgary to Singapore, approximately 14000 km and 33 hours. Upon arrival at the airport in Singapore at 2 am in the morning, we where welcomed by Alex, Chris and other ITE employees.
Day 2 Saturday

Since we travelled for 33 hours we lost a whole day. Alex met us at 11 am and gave us the three week itinerary.
After breakfast Alex showed us the college vicinity at east point mall. Next was the tour around city hall followed by touring some interesting points along the river.
